Ingredients:
395g can sweetened condensed milk
220g caster sugar
125g butter, chopped
2 tbsp glucose syrup
200g white chocolate melts
70g slivered almonds, toasted (optional)
110g raspberry jam
Instructions:
Grease and line a 20cm square cake tin with baking paper, allowing the sides to overhang.
Place the condensed milk, sugar, butter and glucose syrup in a medium pot over low heat. Stir continuously until the sugar dissolves and mixture is smooth and glossy (approximately 8mins) then increase the heat to medium-low and allow the mixture to come to a very gentle simmer. Continue stirring for 6-8 mins until mixture thickens. Remove from heat. Quickly stir in the white chocolate until smooth. Stir in almonds if you are using them and then pour mixture into the prepared tin.
Spoon dollops of the jam over the fudge and use a skewer or butter knife swirl it through your fudge
Cool fudge to room temperature before placing in the fridge for several hours until it's firm.
When set cut into the desired sized pieces.
