Pancakes are a weekend tradition in my house, especially on slow, lazy Sunday mornings. Most of the time, I keep it simple with a sprinkle of sugar and a drizzle of fresh lemon juice—but I’ve definitely dabbled in all sorts of flavour combinations over the years. Then I discovered whipped cinnamon butter, and let me tell you, it’s a game-changer. It’s so easy to whip up a batch while the pancakes are cooking, and there’s just nothing quite like it to take your pancake stack to the next level.
Ingredients:
1 cup unsalted butter (at room temperature)
2 teaspoons cinnamon
1/4 cup honey
1/2 cup icing sugar
1 teaspoon vanilla extract
A pinch of salt
Instructions:
Combine all ingredients in a bowl. Mix with an electric mixer until they are whipped and well combined. Keep in a sealed container in the fridge.
