These Vietnamese Pork Mince Bowls are packed with caramelised goodness that’s quick to prepare and full of delicious depth. With tender pork mince cooked in a rich, sticky sauce, this dish is the perfect balance of savoury, sweet, and a little kick from fresh chilli. Serve it over fluffy rice or vermicelli noodles. A simple yet irresistible dish that’s sure to impress!
Ingredients:
500gm pork mince (ground pork)
5 tablespoons of tightly packed brown sugar (ensure it's packed well, or it won't caramelize)
1 1/2 tablespoons of cooking oil (sesame or peanut but any will do)
1/2 onion, finely diced
2 teaspoons ground ginger (either freshly grated or from a jar)
2 garlic cloves, minced (or 2 tsp garlic paste)
1 birds eye or Thai chili, deseeded and finely chopped (optional)
2 tbsp fish sauce
Instructions:
Heat the oil in a large skillet over high heat.
Place the onion, ginger, garlic, and chili (if using) in the pan and cook for 2 minutes until they release their aroma.
Place the pork mince in the pan and cook for 2 minutes, using a wooden spoon to break it apart, until it turns completely white.
Mix in the brown sugar and fish sauce. Allow the mixture to cook undisturbed for approximately 2 minutes until the juices evaporate and the pork starts to caramelize.
Stir and let it sit for approximately 30 seconds to enable further caramelisation. Repeat this process two more times until the pork achieves your preferred level of caramelisation.
Serve over jasmine rice, vermicelli noodles, or opt for cauliflower rice for a low-carb alternative and top with sliced green onions and chilli. To make it a more authentic Vietnamese dish, add slices of plain cucumber and carrot on the side.
