Venison Burger

Elevate your burger game with this flavour-packed venison burger! Made with lean, tender venison mince and topped with your favourite fixings, it’s a delicious twist on a classic. Perfect for a summer BBQ or a cosy dinner, this burger combines gourmet flair with hearty satisfaction.

Ingredients:
1kg ground venison (wild or farmed, as preferred)
6 slices streaky bacon, finely minced
2 tablespoons oil (any vegetable oil will do)
1/2 a medium sized red onion, finely minced
1 teaspoon minced garlic
1 tablespoon Worcestershire sauce
1 tablespoon chopped fresh parsley
Salt and pepper to taste (or use Avohaven Salt'n'Peppa)
1 large free-range egg, lightly beaten
Instructions:
In a pan over medium heat, cook the streaky bacon until it is browned and crispy. Move the bacon and any rendered fat into a heatproof bowl to cool.
In the same pan, heat the oil. Add the minced shallots and garlic, and cook until softened and fragrant, about 3 minutes. Add this mixture to the cooled bacon.
In a large mixing bowl, mix the venison with the bacon mixture. Add the Worcestershire sauce, fresh parsley, salt, and pepper and mix thoroughly. Add the beaten egg and stir until well combined then cover the mixture and refrigerate for 20 minutes to help the flavours meld and make the mixture easier to handle.
Preheat your BBQ or grill to medium-high heat. Shape the venison mixture into 6 evenly sized patties. Grill the patties for 3–4 minutes per side, or until they reach your preferred doneness. Avoid overcooking, as venison is lean and can dry out.
Toast your favourite burger buns on the BBQ or in the oven. Assemble the burgers with your choice of toppings—sliced beetroot, avocado, caramelised onions, and a dollop of aioli or chutney.
