There are multiple citrus vinaigrette recipes floating around. Every cook book or recipe website has multiple variations and so do we. This is a tasty creation that is great for summer.
Ingredients
1 tablespoon crushed garlic
1/4 cup of freshly squeezed lemon juice
(approx 2 to 3 lemons depending on size)
1/4 cup Red Wine Vinegar
1 1/2 tablespoons of Dijon mustard
(or wholegrain mustard)
2 tablespoons thyme chopped
2 cups Avocado Oil
1 cup Canola Oil
(or sunflower or grapeseed oil)
1/2 teaspoon Honey
(optional if you like it sweeter)
Salt & Pepper to season
Instructions
In a large bowl whisk all ingredients together.
Taste and seasoning accordingly
Refrigerate in a glass container.
