Spiced Grilled Chicken

This Spiced Grilled Chicken is packed with warm, aromatic flavours and is perfect for cooking on the BBQ or a grill pan. Spiced Grilled Chicken

Ingredients:

2.2kg boneless, skinless chicken thighs

2 tablespoons olive oil

1 tablespoon flaky sea salt

Juice of 2 lemons (approx. 4 tablespoons)

1 ½ teaspoons ground cinnamon

1 teaspoon ground black pepper

½ teaspoon ground turmeric

½ teaspoon ground cumin

¼ teaspoon ground nutmeg

¼ teaspoon ground cloves


Instructions

In a small bowl, whisk together the olive oil, salt, lemon juice, cinnamon, black pepper, turmeric, cumin, nutmeg, and cloves until well combined to form the marinade.


Place the chicken thighs in a large zip-top bag or shallow dish, pour over the marinade, and mix well to coat evenly. Cover and refrigerate for at least 2 hours, or overnight for deeper flavour.


Preheat the BBQ or grill pan – If using a BBQ, heat it on high for 10–15 minutes, then lightly oil them to prevent sticking. If using a grill pan, heat it over medium-high heat and lightly grease with oil.


Cook the chicken over medium heat (covered if using a BBQ) for 7–10 minutes per side, until golden brown and cooked through. Cooking time will vary based on thickness, so check doneness by slicing through the thickest part – the meat should be fully cooked with no pink remaining.


Let the chicken rest for 5 minutes, loosely covered, to keep it juicy.


Serve with fresh salad, flatbreads, or your favourite sides.
