This recipe is perfect for fresh smoked fish but works perfectly well with canned smoked fish or even smoked salmon making a quick and easy meal.
Ingredients:
180gms smoked fish flaked or chunked
(either fresh or canned)
1 mid sized onion finely chopped
275gms flour
2 tablespoons baking powder
300mls milk (you may need a little more)
1 teaspoon garlic powder (you can use crushed garlic)
Fresh parsley or coriander (approx 1/2 cup) chopped
Salt & Pepper
Avocado oil for frying
Instructions:
In a bowl mix the flour and baking powder together. If you are using garlic powder add it now.
Stir in the milk slowly first making a paste then adding more milk until you have a nice smooth mixture.
If you are using canned smoked fish, drain the fish flakes reserving the brine set aside.
Add in the smoked fish, onions, garlic (if you are using crushed garlic) and your chopped greens to your batter and season with a good pinch of salt and pepper.
If your batter is a little too thick, thin it out with a small drizzle of additional milk or if you are using canned smoked fish you can add a small drizzle of the brine. The batter should be on the thicker side.
Heat the avocado oil (or use olive oil) in a pan and when hot, spoon spoonfuls of your fritter mixture into the pan. Cook until golden brown before flipping and cooking on the other side.
Remove from the pan and set aside on a plate with a paper towel to absorb any excess oil to prevent the fritters from becoming soggy. Repeat until all batter has been used.
