Roasted Carrot & Fennel Soup

As the weather cools and the days grow shorter, there’s nothing more comforting than a bowl of Roasted Carrot & Fennel Soup. The natural sweetness of roasted carrots pairs beautifully with the delicate aniseed flavour of fennel, creating a soup that’s both warming and satisfying. Roasted Carrot & Fennel Soup

Ingredients:

6 large carrots, peeled and roughly chopped

1 large fennel bulb, trimmed, cored, and sliced (reserve fronds for garnish)

1 large onion, chopped

4 cloves garlic, peeled

3 Tbsp olive oil

2 tsp Avohaven BBQ Gourmet Salt (adjust to taste)

1/2 tsp freshly ground black pepper

4 cups vegetable or chicken stock

1 tsp honey or maple syrup (optional, to enhance sweetness)

1/2 cup cream, coconut cream, or Greek yogurt (optional, for creaminess)

Crusty bread, for serving


Instructions:

Preheat the oven to 200°C

In a large bowl, toss the chopped carrots, fennel, onion, and garlic with olive oil, Avohaven BBQ Gourmet Salt, and black pepper then spread evenly on a baking tray.


Roast for 30-35 minutes, stirring once halfway through, until the vegetables are soft and caramelized at the edges.


Transfer the roasted vegetables to a large pot. Pour in 4 cups of stock, and add honey (if using). Bring to a gentle simmer over medium heat for 10 minutes.

Blend the soup until smooth using an immersion blender (or transfer to a stand blender in batches). Adjust consistency with more stock if needed.


Taste and adjust seasoning with more Avohaven BBQ Gourmet Salt or pepper if desired.

Serve warm, drizzled with cream, coconut cream, or a dollop of Greek yogurt. Garnish with reserved fennel fronds.


Enjoy with crusty bread for a hearty meal!


Tips & Variations:

For extra smokiness add 1/2 tsp smoked paprika.

For an spicier version, replace the Avohaven BBQ salt with the Avohaven Chilli Garlic Salt.

For a vegan version, use coconut cream or omit the dairy entirely.

For protein, top with crispy chickpeas.
