Quick & Easy Baked Meatballs: Deliciousness in a Flash!

This is a quick easy recipe that can be modified to suit the day or the dinner party. It can be made in advance and reheated and makes the perfect meal prep lunch the next day.

Make the base recipe or add a bit of spice. The choice is up to you.

Quick & Easy Baked Meatballs

Ingredients:

500gms of Mince

(In our opinion the best option is to mix 50/50 beef & pork mince. You can buy this ready made from Woolworths, but 100% beef mince is fine also)

1 large egg beaten

1/2 cup of breadcrumbs

1 tablespoon of seasoning of your choice (Herbalicious, BBQ & Pepper Steak all work great here or you can add mixed dried herbs if you wish)

3 cloves of garlic minced

420g can of your favourite pasta sauce

Grated mozzarella for topping


Instructions:

Preheat your oven to 190 degrees Celsius on fan bake.

In a bowl mix together your mince, the beaten egg, garlic, breadcrumbs and the seasoning of your choice or herbs. Cover and set aside to rest for 20 minutes.

After it's rested and using wet hands, roll the mince mixture into small balls. You should be able to achieve 12 to 16 balls.

In large frying pan with a dash of oil, sear the meatballs for 2 to 3 minutes on each side to add some colour but not cooked all the way through.

Place the seared meatballs and any pan juices into an oven proof casserole dish and pour over the pasta sauce along with about half a cup of water and gently mix through the meatballs so that they are coated with the sauce. Be careful not break up the meatballs.

Sprinkle the grated cheese over the top and bake in the oven for 15 to 20 minutes until the sauce is bubbling and the meatballs are cooked through. Leave to sit for 5 minutes before serving.

Serve with pasta or just on a plate as they are. As fancy or as simple as you like.
