Our Oregano and Garlic roasted chicken is an absolute favourite. It’s great as a meal and makes the most delicious sandwiches the next day, that’s if there is any left.
Ingredients
The Stuffing
2 cups fresh breadcrumbs (we used Ciabatta blitzed in the food processor)
1 small onion finely chopped
1 teaspoons of crushed or finely chopped garlic (you can use more if you love garlic)
2 tablespoon of fresh oregano finely chopped
1 tablespoon of lemon zest
1 tablespoon Oregano & Garlic Fusion Avocado Vinaigrette
1 egg
½ tsp salt and freshly ground pepper
The Chicken
1 large chicken for roasting
Oregano & Garlic Fusion Avocado Vinaigrette
1 tablespoon of fresh oregano chopped
Fresh oregano for garnishing
Instructions
Preheat an oven to 180C.
The Stuffing:
In a bowl, combine the breadcrumbs, onion, garlic, fresh herbs, lemon zest, Oregano & Garlic avocado vinaigrette, egg, salt and pepper and mix to combine. Fill the cavity of the chicken with the mixture
The Chicken:
With the chicken stuffed, rub the skin of the chicken with Oregano & Garlic Fusion Avocado Oil and sprinkle over the extra fresh oregano. Place into the oven for 1½ hours or until the juices run clear.
