The combination of juicy tomatoes, crisp cucumber, and sharp red onion, all dressed in olive oil and red wine vinegar, creates a refreshing bite that pairs beautifully with grilled meats or a slice of crusty bread. Want to mellow out the onion? Try using quick-pickled red onion instead—it adds a subtle tang that takes this classic salad to the next level.

Ingredients:
5 medium Roma tomatoes, halved lengthwise, deseeded, and thinly sliced
¼ red onion, peeled, halved lengthwise, and thinly sliced
1 Lebanese cucumber, halved lengthwise and thinly sliced
2 tablespoons extra virgin olive oil (EVOO)
2 splashes of red wine vinegar
Flaky sea salt and cracked black pepper, to taste (or any of the Avohaven Gourmet salts)
Instructions:
In a bowl, toss the tomatoes, onion, and cucumber with a generous drizzle of extra virgin olive oil, red wine vinegar, and a good pinch of flaky sea salt and black pepper.
