These Lemon Marinated Chicken Skewers with Tzatziki Sauce are quick, easy, and packed with flavour! Juicy, citrusy chicken grilled to perfection pairs perfectly with thick, creamy Greek tzatziki sauce. Ready in no time, this delicious recipe is perfect for BBQs, weeknight dinners, or meal prep.
Lemon Chicken Skewers with Tzatziki Sauce

Ingredients:

Chicken Skewers

3 Tbsp fresh lemon juice

1 Tbsp red wine vinegar

2 Tbsp extra virgin olive oil

2 cloves garlic, grated or finely minced

2 tsp dried oregano

½ tsp dried parsley

½ tsp ground cumin

½ tsp ground coriander

Salt and freshly ground black pepper, to taste

700g boneless, skinless chicken breasts, cut into 2.5cm cubes


Tzatziki Sauce

1 cup grated telegraph cucumber (or finely diced)

1 ½ cups plain Greek yoghurt (non-fat, 2%, or full-fat)

Juice of ½ a lemon

1 Tbsp chopped fresh dill

½ tsp grated garlic (or 1 tsp for extra garlic flavour)

Salt and freshly ground black pepper, to taste


Instructions:

Chicken Skewers

In a large bowl, whisk together the lemon juice, red wine vinegar, olive oil, garlic, oregano, parsley, cumin, coriander, salt, and pepper.


Add the chicken pieces to the marinade and toss to coat. Cover and refrigerate for at least 1 hour (or up to 4 hours for extra flavour).


If using wooden skewers, soak them in water for 30 minutes before cooking.

Preheat the BBQ or a grill pan to medium-high heat (around 200°C).


Thread the marinated chicken pieces onto the skewers. Lightly oil the grill to prevent sticking.

Cook the skewers for 3-4 minutes per side, turning occasionally, until the chicken is golden brown and cooked through (internal temperature should reach 75°C).


Tzatziki Sauce

Place the grated cucumber in a clean tea towel or paper towels and squeeze out the excess moisture.


Transfer the cucumber to a bowl and mix in the Greek yoghurt, lemon juice, dill, garlic, salt, and pepper. Stir well to combine.


Taste and adjust seasoning if needed. Refrigerate until ready to serve.


Serve the chicken skewers with the tzatziki sauce, warm pita, and a fresh Greek salad for a complete meal.
