Our Lamb Burger with Mint & Herb Dressing is the perfect light and refreshing dish for a summer lunch or dinner. Made with lamb mince, spinach, grated onion, and ricotta, these juicy patties can be cooked on the BBQ or in a pan. Topped with a cool dollop of our Greek yogurt-based Mint & Herb Dressing, it's a fresh and flavourful option that’s ideal for warm weather dining!
Ingredients:
2 Small onions grated
1 tablespoon Herbalicious Salt
200g baby spinach leaves
300g lamb mince
3 tablespoons ricotta
6 tablespoons Greek yogurt
Mint leaves finally chopped
4 Sesame Seed burger buns
Oil for frying (avocado or olive)
Instructions:
Bring a pot of water to a simmer and turn it off. Add the spinach until it wilts. This will only take a few minutes. Remove the spinach and squeeze out as much water as possible. Frozen spinach works just as well here.
Chop the spinach finely and add to large bowl.
To the spinach add the lamb mince, the grated onion, the ricotta and Herbalicious salt mixing well to combine before forming into four burger patties.
Cook the burger patties using a small amount of oil until cooked through. This should be about 5 to 8 minutes each side depending if you are cooking in a pan or on the bbq.
While your lamb patties are cooking mix the yogurt , chopped mint and a small pinch of Herbalicious salt in a separate bowl and combine to create a mint and herb dressing.
Assemble your burgers however you prefer. You can add anything you like such as red onion, lettuce, tomato etc. We toasted the buns with a little garlic butter and added a few spinach leaves before layering on our lamb patty and adding nice big dollop of our mint and herb dressing.
