Jumbo Pork Sausage Rolls

Homemade sausage rolls are a favourite of just about everyone. Great for lunch or dinner, in Summer or Winter sausage rolls are one of my go-to's and these jumbo sausage rolls are guaranteed to impress. I almost feel like I'm cheating when I make these. They are so simple and can be modified to suit any occasion.

Trending everywhere at the moment is the use of actual sausages, combined with other ingredients, to create your home made sausage rolls. Get creative and use different flavours.

My personal favourite for this recipe is pork sausages by Beard Brothers. (www.beardbrothers.co.nz) They are available online or through major supermarkets.

 

Ingredients

600g store brought pork sausages - try the Pork Rib Rocker Sausages from the Pitmaster Series Bangers, from Beard Bothers

400g pork mince

2 eggs

Crushed garlic - approx 3 cloves but suit yourself

1 onion finely chopped

1 tablespoon of dried mixed herbs

2 tablespoons of your favourite sauce - I used 1 tablespoon of steak sauce & 1 tablespoons of soy sauce

1/2 teaspoon of salt - I used our Manuka Smoked Salt

1/4 teaspoon of white pepper

3 sheets of supermarket puff pastry

Extra beaten egg to brush on the pastry

Everything Avocado Seasoning


Instructions

Preheat the oven to 180 degrees on fan bake.


Slice into the sausages and remove the sausage meat from the casings. Add the sausage meat to a bowl and discard the casings.

Add the pork mince to the sausage meat along the eggs, garlic, onion, herbs, sauce, salt and pepper and combine well.


Cover a baking tray with baking paper and on your baking paper, join two pastry sheets together along one side, overlapping about 2cm pressing to secure. Cut the third piece of pastry in half and join the two pieces along the top to form one large rectangle. This should be about the size of your baking tray.


Spoon the pork mixture along the centre of the pastry and then roll the pastry with the shortest side up to the middle and then fold the longer side over the top to enclose the sausage filling.


Brush the top and sides of your sausage roll with the extra egg and add a generous amount of Everything Avocado Seasoning.


Fan bake for approx 50mins or until the sausage meat is cooked through and the pastry is puffed and golden.


Cut your Jumbo Sausage Roll into pieces and enjoy hot or cold.
