Bright, creamy, and irresistibly nostalgic, our Jelly Slice is the perfect treat for any occasion. With layers of biscuit base, creamy filling, and a layer of jelly on top, it’s a guaranteed crowd-pleaser!
Ingredients:
250g biscuits crushed
170g butter melted
3 tsp gelatine powder
1/4 cup water
250g cream cheese
395g sweetened condensed milk
1/3 cup lemon juice
1/2 cup cream
85g packet jelly crystals (you can use a flavour of your choice - strawberry/raspberry/lemon/lime etc)
Instructions:
Crush the biscuits until they resemble breadcrumbs.
Add the melted butter to the biscuits and combined until the biscuits are sticking together.
Press the biscuit mixture evenly over the base of a 20cm x 30cm lamington tin. Refrigerate until required.
Sprinkle gelatine over the water, allow the mixture to stand for a few minutes then microwave for 30 seconds or until dissolved.
In an electric beater, beat the cream cheese until smooth then add the condensed milk, lemon juice and cream. Continue to beat until smooth everything is incorporated into a smooth mixture.
Gently stir in your gelatine mixture and pour your cream cheese mixture over the top of biscuit base. Refrigerate until set for at least 2-3 hours.
Make up the jelly of your choice according to packet directions and allow to cool to room temperature. Gently pour the jelly mixture over cream cheese layer.
Refrigerate until slice is set completely.
Cut into squares to serve.
