Honey Garlic Pork Stir-Fry

Ingredients:

500g pork loin steaks, cut into strips

1 Tbsp olive oil

½ cup water

⅓ cup liquid honey

1 tsp red chilli flakes (adjust to taste)

2 cloves garlic, crushed

2 Tbsp soy sauce

1 carrot, thinly sliced

¼ cabbage, finely sliced

½ capsicum, thinly sliced

1 bok choy, sliced

2 x 200g packets udon noodles

Instructions:

In a small bowl, prepare the sauce by whisking together the water, honey, chilli flakes, garlic, and soy sauce then set aside.

Heat the olive oil in a large pan or wok over medium-high heat. Add the pork strips and stir-fry for 3–4 minutes until browned and just cooked through. Remove the pork from the pan and set aside.

In the same pan, add the carrot and cabbage. Stir-fry for 2 minutes, then add the capsicum and bok choy. Cook for another 2 minutes until the vegetables are just tender but still crisp.

Return the pork to the pan and pour in the honey garlic sauce. Stir well to coat everything in the sauce, then let it simmer for 2 minutes until slightly thickened.

While the sauce simmers, cook the udon noodles according to the packet instructions.

Add the drained udon noodles to the pan and toss everything together, ensuring the noodles are well coated in the sauce. Cook for another 1–2 minutes until heated through.

Divide into bowls and enjoy immediately! For extra heat, sprinkle with more chilli flakes or serve with a drizzle of soy sauce
