Hearty Spicy African Chicken Casserole

Introducing our Hearty & Spicy African Casserole! This dish brings together tender chicken, chunks of sweet kumara, and vibrant red capsicum, all simmered in a rich blend of tomato, peanut butter, and warming spices like cumin, coriander, and ginger. Avohaven BBQ Salt adds a smoky kick that elevates every bite. Perfect for a cozy dinner or to prep ahead and freeze for later—this casserole is a flavorful, fuss-free addition to your meal rotation!

Hearty Spicy African Chicken Casserole

Ingredients:

500ml heated chicken stock

3/4 of a 375gms jar of smooth Peanut Butter

2 onions halved and thinly sliced

3 tablespoons of oil (Avocado or Olive)

3 tablespoons of chopped ginger

1 tablespoon of Avohaven BBQ Salt

3 teaspoons ground coriander

3 teaspoons ground cumin

1/2 teaspoon of black pepper

2 bay leaves

1-2 Chillies, deseeded and chopped

400g can of chopped tomatoes

1kg of chicken pieces - thighs & drumsticks (you can removed the skin or a more authentic approach but I don't)

3 larges Orange Kumera cut into chunks

2 red capsicum, deseeded and cut into chunks

A good handful of fresh coriander chopped (optional)


Instructions:

Pour the hot stock over the hot stock over the peanut butter and stir until the peanut butter is fully combined.

Add the oil to a large frying pan and fry the onions for 5 minutes until they soften and become translucent. Add the ginger, BBQ Salt, black pepper, coriander, the cumin, chillies and bay leaves and cook for about 2 minutes while stirring.

Add your peanut chicken stock mixture as well as the tomatoes to the pan stirring to mix through the onions, chilli and spices.

Add the chicken pieces to the sauce and cover leaving it to simmer for approximately 30 minutes. Stir frequently to ensure the peanut butter doesn't stick to the bottom of the pan.

Stir in the kumera pieces, capsicum and fresh coriander (if you are using it) then cook for a further 30 minutes until the chicken is cooked.
