Easy Egg Muffins with Bagel Seasoning

Savory egg muffins, perfect for breakfast, lunch or just a snack

Ingredients:

6 large eggs

60mls milk

1/2 red capiscum diced

1/2 cup of diced shaved ham

1/2 cup of your favourite grated cheese

2 teaspoons of Bagel Seasoning plus some to garnish

Chopped chives to garnish (optional)


Instructions:

Preheat the oven to fan 180°C and grease a muffin tray with butter.

In a mixing bowl, whisk the eggs and milk well. Add 2 tsp Bagel Seasoning.

Add the diced capiscum and ham to the egg mixture. Stir well until the ingredients are evenly distributed.

Divide the mixture evenly between the prepared muffin cases. Fill each tin about 3/4 full. Sprinkle the Cheddar evenly over the top.

Bake in the preheated oven for about 20 minutes, or until the eggs have set and the muffins are lightly browned on top.

Remove the muffin tray from the oven and allow the muffins to cool for a few minutes.

Carefully run a knife around the edge of each muffin tin to loosen the muffins, then using a spoon or a fork. gently lift the muffins out.

Garnish the egg muffins with additional Bagel Seasoning and chopped chives as desired and serve warm.


You can adapt this recipe to suit your preferences by adding other vegetables, seasonings or by adding protein such as salmon or finely diced chicken.


Your egg muffins can be stored in an airtight container in the fridge for up to 3 days and can be quickly reheated in the microwave.
