There’s nothing quite like a warm, freshly baked scone straight from the oven. These Easy Cheese & Herb Lemonade Scones are light, fluffy, and packed with flavour, thanks to plenty of sharp cheddar and fresh herbs. The secret ingredient? Lemonade! It adds just the right touch of sweetness and helps create that beautifully soft texture. Perfect for a weekend brunch, an afternoon snack, or alongside a bowl of soup, these scones come together in no time—no kneading, no fuss! Just mix, shape, and bake. Serve them warm with lashings of butter, and enjoy the magic of homemade scones.

 
These Easy Cheese & Herb Lemonade Scones are light, fluffy, and packed with flavour, thanks to plenty of sharp cheddar and fresh herbs.
Cheese & Herb Lemonade Scones

Ingredients:

5 cups self-raising flour

2 heaped cups of grated mature Cheddar or another strong hard cheese

3 Tbsp finely chopped fresh herbs (rosemary, thyme, parsley, and basil)

1 tsp salt (Avohaven's Herbalicious works well)

1 cup (250ml) cream

1 can (340ml) lemonade (such as Sprite)

1 egg, lightly beaten


Instructions:

Preheat the oven to 180°C (fan bake) or 200°C (conventional). Line a baking tray with baking paper or a silicone baking mat.


In a large bowl, combine the self-raising flour, grated cheese, chopped herbs, and salt. Mix well to distribute the ingredients evenly.


Pour in the cream and lemonade, stirring gently until a soft, slightly sticky dough forms. Be careful not to overmix, as this can make the scones tough.


Lightly dust a clean surface with flour and turn the dough out. Gently bring it together into a ball, adding a little extra flour if needed. Flatten it slightly with your hands to about 3.5cm thick—this will help the scones rise well.


Use a round cutter to press out scones, being careful not to twist the cutter (this helps them rise evenly). Place them close together on the prepared tray.


Brush only the tops with the beaten egg—avoid the sides, as this can stop them from rising properly.


Bake for about 15 minutes, or until golden brown and well-risen.

Serve warm with plenty of butter and extra cheese if desired.


Tips for Perfect Scones

Keep the dough as light as possible—handle it gently and avoid kneading.

Brushing only the tops with egg wash helps them rise evenly.

If you prefer extra cheesy scones, sprinkle a little grated cheese on top before baking.
