Ingredients:
200gms dark chocolate, finely chopped
150 mls thickened cream
20gms butter
1 tablespoon rum
1/2 cup cocoa powder
Instructions:
To create your ganache
Add the butter and cream to a small pot and over medium heat stir until combined and the mixture is almost ready to boil.
Add the chopped chocolate to a separate bowl and pour over the hot cream and butter mixture. Leave for a few minutes so that chocolate starts to melt then stir until the mixture is smooth. Add the tablespoon of rum and stir through. Allow the mixture to cool then place into the fridge for at least 4 hours (preferably until the next day).
To create your truffles
When your ganache is set and you are ready to form your truffles, line a flat dish or baking tray with baking paper and add your cocoa powder to a shallow dish or saucer.
Using a melon baller or a teaspoon, scoop teaspoons of the ganache and using your hands roll into balls. Roll the balls through the cocoa mixture to cover and arrange on the plate or baking tray. Return the truffles to the fridge until you are ready to serve.
