Crispy Cauliflower Bites

Golden, crispy, and packed with flavour—these Crispy Cauliflower Bites are the perfect way to elevate your appetiser game! Whether you're serving them as a starter, a snack to share, or even a light meal, they deliver just the right amount of crunch and seasoning. For the ultimate flavour boost, simply sprinkle your favourite Avohaven gourmet salt over the top as they come out of the oven. Ingredients:
1 head of cauliflower, cut into florets
1 Tablespoon cornflour
1 egg
1 Tablespoon water
1 cup panko breadcrumbs
½ teaspoon onion powder
½ teaspoon garlic powder
1 teaspoon flaky sea salt
¼ teaspoon black pepper
Instructions:
Preheat the oven to 220°C (fan bake).
Prepare a baking tray by placing oven-safe cooling racks on top (if you don’t have these, line with baking paper). Lightly grease the racks with cooking spray or olive oil.
Prepare the cauliflower by cutting it into bite-sized pieces. Trim the stems so they are more "nugget" shaped and easier to pick up and dip. Try to keep them similar in size to ensure even cooking.
Coat with cornflour by tossing the cauliflower florets until completely covered. Set aside.
Make the egg wash by whisking the egg and water together in a medium bowl. Set aside.
Prepare the breadcrumb coating by combining the panko, onion powder, garlic powder, salt, and pepper in a shallow bowl.
Dip each cornflour-coated cauliflower piece into the egg mixture, letting any excess drip off. Then, toss in the panko mixture until fully coated. (Tip: Use one hand for the egg wash and the other for the panko to keep things tidy.)
Arrange on the baking tray in a single layer.
Bake for 18-23 minutes, or until the cauliflower is fork-tender and the panko is golden brown.
Serve immediately and enjoy!
Dipping Sauce Ideas:
Garlic Aioli – Mix ½ cup mayo with 1 minced garlic clove and a squeeze of lemon juice.
Sweet Chilli Mayo – Combine ½ cup mayo with 2 tablespoons sweet chilli sauce and a dash of lime juice.
Honey Mustard Dip – Mix ¼ cup Dijon mustard with 2 tablespoons honey and 1 tablespoon Greek yoghurt.
Spicy Sriracha Yogurt – Blend ½ cup Greek yoghurt with 1 tablespoon sriracha and a squeeze of lemon.
Herby Avocado Dressing – Mash ½ an avocado and blend with 2 tablespoons Greek yoghurt, 1 tablespoon lemon juice, and fresh chopped herbs like coriander or parsley.
