This Crispy Bacon & Cheddar Potato Salad is a mouth-watering twist on the classic potato salad, perfect for gatherings or a hearty side dish. Tender baby potatoes, crispy bacon, and creamy cheddar combine with a tangy dressing to create a delicious balance of textures and flavours. Finished with fresh chives, it’s a crowd-pleaser that's both comforting and refreshing—ideal for any Kiwi-style barbecue or family dinner!
Ingredients:
900gms (approx) baby potatoes, quartered
200gms bacon, diced
180gms shredded cheddar cheese
120gms sour cream
120gms mayonnaise
1 ½ tablespoons Dijon mustard
2 Spring onions, chopped
A good pinch of BBQ Salt (or salt and pepper to taste)
Instructions:
Boil potatoes until tender, about 10-15 mins. Drain and cool.
Cook bacon until crispy and set aside.
In a large bowl mix the sour cream, mayonnaise and mustard together. Season with a good pinch of BBQ for a smoky-sweet BBQ flavour. Taste and adjust the BBQ (or salt & pepper) as required.
Add the cooked potatoes, bacon, cheese, and chives to the bowl and gently stir through the dressing so not to break up the potatoes too much. Chill before serving.
