Coconut Lemon Slice

This no bake Lemon Coconut Slice is a burst of citrusy goodness. A little piece of summer in every bite.
Lemon Coconut Slice

Ingredients:

For the base

2 packets of plain sweet biscuits (I use Griffins Krispie Biscuits)

1 tin (395gms) of sweetened condensed milk

1 cup desiccated coconut

200g butter

1 lemon, juiced and zested


For the Icing

2 cups icing sugar

3 tablespoons lemon juice

50g butter, melted

Desiccated coconut, for decorating


Instructions:

For the base

Line a rectangle baking tin with some baking paper.

Melt the butter in a large pot over medium heat. Add the sweetened condensed milk and lemon juice. Stir until incorporated. The mixture should be warm but not hot. Remove from the heat.


Place biscuits into a food processor and process to fine crumbs. Combine biscuit crumbs, coconut and lemon zest into a bowl.

Add the warm butter and condensed milk mixture to the biscuit crumbs and stir to combine.

Press the biscuit mixture into your baking tin to create and even layer.


For the Icing

Make the icing by combings all ingredients (excluding the coconut) into a bowl and stir to combine. Spread the icing over your biscuit base and sprinkle the coconut on top.

Refrigerate for at least 30 minutes to set.
