Christmas White Chocolate Rocky Road

Christmas White Chocolate Rocky Road

Ingredients:

500gms White chocolate buttons or callets

200gms Butter

100gms Shortbread or digestive biscuits broken up

75gms Marshmallows cut up or use the mini marshmallows

45gms Meringue nests broken up

85gms Freeze dried strawberries (I used Fresh As Freese Dried Strawberries)


Instructions:

Line a square baking tin with baking paper.

Put the butter and white chocolate in a small bowl and microwave in 30 second increments stirring between each 30 seconds until everything has melted and combined together well.


Before adding your base ingredients to a large mixing bowl reserve a small amount of freeze dried strawberries and some broken up meringue to use as decoration on top of your rocky road.


Pour almost all of the chocolate mixture into the mixing bowl of biscuits and meringue etc. and stir to fully coat the fillings with chocolate before placing the mixture into even layer in your baking time. Pour the remaining chocolate evenly over the top of your mixture in the baking tin to fill in any gaps.


Decorate the top with the reserved meringue and freeze dried strawberries.

Put in the fridge to set for a few hours then slice into bite sized pieces.
