Roasted Cauliflower Steaks are a simple yet flavour-packed way to turn this humble vegetable into a standout dish. Seasoned with Avohaven’s BBQ salt, these steaks develop a beautifully caramelised crust with just the right balance of smoky and sweet flavours. A fresh and zesty red pepper salsa, featuring tangy gherkins, parsley, and capers, adds brightness, while toasted almonds bring a satisfying crunch. Whether enjoyed on their own or as a side, these Roasted Cauliflower Steaks are a delicious addition to any meal.

Ingredients:
1 cauliflower
½ tsp Avohaven BBQ salt
2 tbsp olive oil
1 roasted red pepper
2 small gherkins, finely diced
Small handful fresh parsley, chopped
1 tsp capers, chopped
½ tbsp red wine vinegar
2 tbsp toasted flaked almonds
Instructions:
reheat your oven to 220°C (200°C fan bake) and line a baking tray with baking paper. Slice the cauliflower into two 2.5 cm thick steaks—use the middle part, as it holds together best. Set aside the remaining cauliflower for another dish.
Rub the BBQ salt and ½ tbsp of olive oil over the cauliflower steaks. Place them on the tray and roast for 15-20 minutes, or until golden and tender.
While the cauliflower roasts, make the salsa. Finely chop the roasted red pepper, gherkins, parsley, and capers, then place them in a bowl. Add the remaining olive oil and red wine vinegar, then mix well. Taste and adjust seasoning if needed.
Once the cauliflower is cooked through, spoon the salsa over the hot steaks. Sprinkle with toasted flaked almonds before serving.
