Balsamic Baked Chicken

Juicy, tender, and bursting with flavour, this Balsamic Baked Chicken is a must-try for any home cook. Golden-seared chicken breasts are baked in a rich, garlicky balsamic tomato sauce, then topped with melted mozzarella and fragrant fresh basil for the perfect balance of tangy, savoury, and cheesy goodness. It’s an easy, wholesome meal that feels gourmet but comes together effortlessly—perfect for busy weeknights or a special dinner at home. Serve it with crusty bread, pasta, or a fresh salad for a meal that’s sure to impress!

Balsamic Baked Chicken

Ingredients:

4 boneless, skinless chicken breasts

1 tsp Avohaven Salt’n’Peppa

1 tsp olive oil

2 cups cherry tomatoes, halved

3 cloves garlic, minced

¼ cup balsamic vinegar

¼ tsp dried oregano

1 tsp dried basil

1 cup shredded mozzarella cheese

½ cup fresh basil, chopped

Extra fresh basil leaves for garnish


Instructions:

Preheat oven to 190°C

Season the chicken breasts with Avohaven Salt’n’Peppa.


Heat olive oil in a large pan over medium heat. Sear the chicken for 3-4 minutes per side until golden brown. Transfer to a greased baking dish.


In the same pan, sauté the garlic for 1 minute until fragrant.

Add the cherry tomatoes, balsamic vinegar, dried oregano, and dried basil. Cook for 5 minutes, stirring occasionally, until the tomatoes begin to soften.


Spoon the tomato mixture over the chicken in the baking dish, then sprinkle mozzarella cheese on top. Bake for 20-25 minutes until the chicken is cooked through and no longer pink inside.

Remove from the oven and top with fresh chopped basil and extra basil leaves.


Tips & Variations

Add a cheesy twist by sprinkling Parmesan over the mozzarella before baking.

For a spicy kick, add a pinch of red pepper flakes to the tomato mixture.

Swap the chicken for thick slices of eggplant for a vegetarian-friendly option.
