Avocado & Lime Sorbet

Nothing says summer quite like the bright, zesty combo of lime and creamy avocado – and when you add coconut into the mix, you’ve got a match made in tropical heaven. This Avocado & Lime Sorbet is ultra-refreshing, silky smooth, and just the thing for those long, sunny afternoons. Light yet indulgent, it’s the perfect balance of tangy citrus, rich avocado, and creamy coconut, making every scoop a taste of summer. Serve it straight from the freezer for a cooling treat that feels like a mini holiday in a bowl!

 
The zesty combo of lime avocado  and coconut give you this tropical sorbet delight.
Avocado & Lime Sorbet

Ingredients:

150ml (⅔ cup) water

90g (about ¼ cup) runny honey

3 limes – zest of 2, juice of 3

1 x 400ml can coconut milk

¾ cup avocado flesh


Instructions:

In a small pot, heat the water and honey over medium heat, stirring until the honey is fully dissolved. Remove from heat and allow to cool.

Finely grate the zest of two limes and squeeze the juice from all three. Stir the zest and juice into the cooled honey syrup.

Add the coconut milk and mix well.

Once the mixture has cooled, blend it with the avocado in a food processor until completely smooth. The texture should be thick, similar to whipped cream.


Using an ice cream maker:

Place the mixture in an ice cream machine and churn until it becomes scoopable.

Move it to a container and freeze until serving.


Making by hand:

Transfer the blended mixture into a resealable plastic bag. Spread it flat on a tray and seal the bag. Place it in the freezer for several hours or overnight.

After it is frozen, break the mixture into pieces and blend in a food processor for approximately 30 seconds until smooth. If necessary, allow it to soften a bit before processing.

Move the mixture to a metal container, level the surface, and freeze until it becomes firm.


To serve, scoop into bowls and add topping of your choice, lime zest, toasted coconut or a drizzle of honey.
