Avocado Hollandaise

Ingredients:

1 medium ripe avocado

Juice of 1 lemon (about 2–3 tablespoons)

A pinch of salt (try Avohaven's gourmet options!)

A pinch of white or black pepper (white keeps the sauce smooth and green)

2–4 tablespoons hot water

Instructions:

Scoop the avocado flesh into a blender.

Add the lemon juice, salt, and pepper.

Blend on low, slowly adding hot water until the sauce reaches your desired consistency.

Taste and adjust seasoning as needed.

For a warmer sauce, transfer to a small pan and heat gently over low heat, stirring frequently, for about 5 minutes.

Serving Suggestions

  • Spoon over perfectly poached eggs for an avocado twist on eggs Benedict.

  • Drizzle over steamed or roasted vegetables like asparagus, broccoli, or carrots.

  • Use as a creamy, zesty dressing for salads or grain bowls.
